I have a very simple recipe for shredded picante chicken that my family loves. Last Sunday my youngest daughter turned down a dinner invitation with her boyfriend because she was so looking forward to the picante chicken I was making for dinner. I love it because it is so simple and depending on how you serve it, can be very low in fat and carbs. It is made in a Crockpot so all I have to do is put the ingredients in the Crockpot and let it cook. The chicken is very versitle and can be served over rice, in tacos or burritos, in salads, etc.

Easy Shredded Picante Chicken
- 1 24-ounce jar of Pace picante (I use the mild)
- 5 frozen chicken breasts
Put the frozen chicken breasts in a Crockpot. Pour the picante sauce over the chicken breasts. Turn the Crockpot on low and cook for 6-8 hours. Use a fork to shred the chicken breasts and drain the excess liquid.
The cooking time can be reduced by turning the Crockpot up to high and cooking it on high for a couple of hours and then reducing the temperature to low until the chicken is cooked.
Also, you can cook a lot more of the chicken by filling up the Crockpot with chicken breasts and using two of the jars of picante sauce.
